About the Role
We are seeking a passionate and highly skilled Grill Chef to join our kitchen team at La Estancia Steak & Wine, Marbella’s premier steakhouse. You will be the heart of our kitchen, mastering the traditional parrilla (Argentinian wood-fired grill) and delivering world-class grilled meats that reflect the true essence of Argentine asado culture.
As our Grill Chef, you will take full responsibility for the grill station, ensuring every steak, cut of meat, and grilled specialty is cooked to perfection with impeccable technique, temperature control, and presentation.
Key Responsibilities
- Master and execute traditional Argentinian parrilla techniques using wood-fired grills ( quebracho, oak, or similar woods)
- Prepare, season, and grill a wide variety of premium cuts including:
- Ojo de bife (ribeye)
- Bife de chorizo (sirloin)
- Asado de tira (short ribs)
- Entraña (skirt steak)
- Vacío (flank)
- T-bone, Tomahawk, and other premium steaks
- Manage all grilled items including chorizos, morcilla, provoleta, grilled vegetables, and empanadas
- Maintain consistent high quality, precise doneness levels (rare, medium-rare, etc.), and beautiful presentation
- Work closely with the butcher and kitchen team to ensure proper meat aging, trimming, and preparation
- Monitor grill temperature, wood management, and fire control throughout service
- Ensure strict adherence to food safety, hygiene, and HACCP standards
- Maintain a clean, organized, and efficient grill station during high-volume service
- Collaborate with the Head Chef on daily specials and menu development
- Train and supervise junior grill cooks or commis chefs when required
Requirements
- Proven experience as a Grill Chef / Parrilla Chef / Asador in a high-quality steakhouse, preferably with Argentinian, Uruguayan, or South American cuisine experience
- Deep knowledge and hands-on expertise in traditional Argentinian asado and wood-fired grilling techniques
- Ability to work at high pace under pressure in a busy, upscale restaurant environment
- Strong understanding of different beef cuts, aging processes, and how they respond to grilling
- Passion for high-quality ingredients and authentic South American cuisine
- Valid EU work permit or Spanish work authorization (essential)
- Professional culinary training or equivalent experience
- Fluent in English (Spanish is a strong advantage; knowledge of Spanish culinary terms is required)

About the Role
We are looking for an experienced and passionate Grill Sous-Chef to take a leadership role at the heart of our kitchen. You will be the right hand to the Head Chef, overseeing the entire parrilla station while ensuring the highest standards of traditional Argentinian grilling are maintained and elevated.
As Grill Sous-Chef, you will lead the grill team, manage high-volume service on the wood-fired parrilla, maintain exceptional quality across all grilled meats, and actively contribute to kitchen operations, menu development, and team training.
Key Responsibilities
- Lead and supervise the grill station team, ensuring smooth and efficient operations during service
- Execute and maintain mastery of traditional Argentinian parrilla techniques using wood-fired grills (quebracho, oak, or local hardwoods)
- Take full responsibility for grilling premium cuts including Ojo de Bife, Bife de Chorizo, Asado de Tira, Entraña, Vacío, T-bone, Tomahawk, and other signature meats
- Oversee preparation, seasoning, aging verification, and perfect doneness of all grilled items
- Manage fire control, wood selection, grill temperature, and timing to deliver consistent excellence under pressure
- Ensure outstanding presentation and plating of all parrilla dishes
- Train, mentor, and develop junior Grill Chefs, Commis, and kitchen team members in authentic asado techniques
- Collaborate closely with the butcher, Head Chef, and kitchen brigade on daily specials, menu evolution, and meat sourcing
- Maintain the highest standards of food safety, hygiene, HACCP, and station cleanliness
- Support the Head Chef in kitchen management, inventory control, and cost management for the grill section
- Step in as acting Head Chef when required
Requirements
- Minimum 1-2 years’ experience as a Grill Chef or Sous-Chef in a reputable steakhouse, with strong focus on Argentinian, Uruguayan, or high-end grilled meat cuisine
- Proven expertise and deep knowledge of traditional Argentinian asado and wood-fired parrilla techniques
- Strong leadership skills with the ability to manage and motivate a team during busy services
- Excellent understanding of beef cuts, dry-aging, marbling, and how different cuts perform on the grill
- Ability to work at high pace in a fast-paced, upscale restaurant environment
- Professional culinary qualification or equivalent extensive experience
